Creamy Coconut Bean and Greens Marsala

4 chopped green onions
1 red bell pepper chopped
a half of medium zucchini chopped
1 1/2 Tablespoons of avo oil
1 – 14oz can chickpeas
1 14 oz can mixed beans or kidney
1 14 oz can coconut full fat milk
2 cups packed spinach or mixed super greens
The paste:
1 TB cumin seeds
1 TB coriander seeds,

2 of cloves of garlic,

1 thumb size piece of ginger,

1/2 red chili chopped,

a small bunch of cilantro (optional),

1 heaping teaspoon of garam Marsala,

1/2 teaspoon smoked paprika,

1.5 teaspoon of salt

1 teaspoon pepper,

 

1 TB tomato paste,
1 can chopped tomatoes

In a dry fry pan place your cumin seed and coriander seed, and heat till toasted and start to pop. In a blender add all the ingredients for your paste including the toasted seeds. And blend. In a sauté pan add a small amount of oil and in your onion and red pepper, and heat till just brown. Edit in your drained and rinsed beans, zucchini and sauté for 3-4 mins.
Add in the coconut milk, and your paste mix together. Allow to simmer for approximately 15 minutes. Stir in greens, and allow to heat. Lastly stir in lime juice and turn off heat.
Serve topped with chopped cashews and a side of plant based raita and naan.
