Fast Easy Bean Taco’s

These simple tacos are so easy and take about 10 mins to throw together.  They are my go to for a post workout meal of a fast meal after a long work day when I have no motivation and I would like to eat before 9:30 at night!

The trick is to have your taco seasoning made ahead (one of my favorites I keep on hand all the time), as well as a can of refried beans and black beans in the pantry.

 

1 14oz Can of Vegetarian refried beans

1 140z can of black beans

2 1/4 Teaspoons of Taco seasonings (My Casa seasoning is what I recommend -see recipe below)

1 1/2 teaspoon garlic powder

1 1/2 teaspoon onion powder

1 teaspoon Cumin ground

1 batch of homemade Guacamole (recipe below)

1/4 cup vegetable broth

1/2 cup salsa

4 large leaves of Romaine

8-10 cherry tomatoes

1/2 red onion chopped

vegan sour cream

4-6 tortillas (gluten free if you lean that way, or corn or flour)

 

Pour refried beans into saucepan, add 1 teaspoon of onion powder, 1 teaspoon garlic powder,  1 teaspoon cumin, 1 1/4 teaspoon of taco seasonings.  Sir and heat.  Open Black beans, strain and rinse well.  Toss beans into sauce pan with a splash of vegetable broth (approximately 3 tablespoons, more if you like a bit more fluid in your beans).  Add in remaining seasonings garlic and onion powder and taco seasonings.  While they are heating, chop romaine, tomatoes, and onion.

To assemble, heat tortilla over burner on a gas stove or in a pan.  Take hot tortilla, add refried beans, whole black beans, salsa, onion, tomatoes, lettuce, and top with fresh guacamole.

Optional toppings vegan sour cream (Kite Hill is amazing!), shredded vegan cheddar. Really the toppings are endless here and you can get super creative. So share what you love on your tacos! I love to hear what different things you add.

 

My Casa Taco Seasoning

1/4 Cup Chili Powder

3 Tbsp Chipotle chili powder

1 Tbsp +1/2 teaspoon Ground Cumin

1 Tbsp +1/2 teaspoon ground paprkia

1 Tbsp +1/2 teaspoon sea salt (Himalayan pink)

1 Tbsp +1/2 teaspoon ground black pepper

1 Tbsp Arrow Root

1 3/4 teaspoon Garlic Powder

1 3/4 teaspoon Onion Powder

1 3/4 teaspoon mexican Oregano

1/2 teaspoon of crushed red pepper flakes or cayenne pepper

 

Mix all together in a jar.

 

Suzanne’s Casa Guacamole

1-2 avocados

3 cloves of garlic minced

juice of 1 lime

1 ½ teaspoon Himalayan Salt

(optional ingredients)

1 – 3 TBS of chopped Cilantro

¼  cup red onion chopped

1 medium red tomato chopped

1 – 2 small serrano peppers

 

Smash peeled avocados with a potato masher or fork until mostly smooth, I like to lease some chunks. Add garlic, lime juice, and salt and mix until you have reached a smooth-ish consistency.  Fold in cilantro, red onion, tomato or fresh serrano peppers.
